How to cut a beef brisket into 7 full meals

Meat prices are rising, and rising fast. For some families that just means eating less expensive meat. For other families it can mean that they can’t afford to buy enough protein for their families. If you’ve foregone meats because you chose to, that’s one thing. But if, like us, you’ve cut back based solely on [...]

Fillet Mignon with Poached Egg

There’s one and only one ingredient in making the perfect steak, and that’s having the best possible piece of beef available. A cut that’s aged perfectly, marbled well and cooked simply will give stunning results each and every time. Anything less and you’ll be forced to resort to fancy seasoning or sauces to make it [...]

In Texas summer means hot. Unrelenting heat and humidity. Long days, high utility bills and lots of time in the pool. (If you can brave the heat to get to it, that is.) This summer is no exception, so when we found out the theme for this weeks Sunday supper was “beat the heat”, we [...]

(You could also call it a California Steak Salad, but I hate branding a thing “Californian” just because it uses Avocado and Sprouts.) It was all about a quick and healthy lunch.  I had a basic idea of combining a few Asian flavors with some darned good fruits and veggies I’d found at the market.  [...]

How many times have you had to decide whether you wanted to go out for burgers or just go get a good slice of pie? It’s a classic mealtime dilemma, one that causes strife in countless households every evening. Dad and little Suzy want pizza, Mom and little Bobby want burgers. Eventually a compromise has [...]

Oven “Smoked” Beef Brisket

by Jerry 13 comments August 11, 2011 Recipes
all-cooked-and-lookin-good

There are those who will go out of their way to tell you (loudly) that you cannot possibly create a great, smoky brisket in a home oven. They will extoll (also loudly) that you cannot get the flavor or texture of smoked brisket without a specialized smoker or pit. These people will then usually go on to mock (very loudly) what has come to be known as Faux-B-Que as the greatest evil to ever be foisted upon the world of Barbecue.

Sadly, in as much as I know and love some of these individuals, they are terribly, horribly wrong.

Are you looking for a dish that is quick, light and packed with flavor? How about one that can be cooked on the grill so you don’t have to heat up the house? What if I told you that it can be served as an appetizer or as the main course… Would you be interested?

This is one of those cases where less really is more. Each component stands on its own but also blends into a harmonious whole that somehow becomes something new. Something special. Yes, it’s just beef, salsa and garlic rubbed toast, but it’s better than that. It’s more complete.

Balsamic Braised Beef Ribs

Balsamic Braised Beef Ribs

Beef Ribs.  For me, the very mention of this wonderful finger food immediately conjures up memories of the massive wood fired pits I became accustomed to in Texas.  Those BBQ places that actually had ribs on the menu were few and far between, but they were invariably my favorite places to eat.  Brisket is great, [...]

(From the archives: this is one of my earliest recipes and I noticed that it could use some polish and a bit of a facelift.  The recipe has ben rewritten to read more clearly, etc,  Enjoy!) While chili (particularly “Texas Red”, and yes, that means no beans.) is the official state food of Texas, there [...]
