There’s one and only one ingredient in making the perfect steak, and that’s having the best possible piece of beef available. A cut that’s aged perfectly, marbled well and cooked simply will give stunning results each and every time. Anything less and you’ll be forced to resort to fancy seasoning or sauces to make it palatable, let alone something to swoon over. This filet mignon recipe has all of those factors tied up.
I’m not saying that you can’t make exceptional meals with not-quite perfect beef, but for the true steak lover, there really is very little to it. Save the lesser cuts for stew, for the good stuff, just sear it off and enjoy it.
Such is the case with this dish, which uses an amazing Filet Mignon from Certified Steak and Seafood. The entire dish is beef, salt, pepper and a poached egg… You could leave the egg off, but I can’t think of a better compliment to a perfect filet myself.
The simplest and absolutely the best fillet you will ever eat.
Instructions are per person. Simply adjust the amounts based on the number being served.
- 1 (8 ounce) Filet Mignon
- Coarse salt and pepper to taste
- Oil, for cooking
- 1 egg, poached (See notes)
Heat oven to 425 degrees. Heat an oven proof skillet with approximately 2 Tablespoons of oil over medium high heat. Pat Fillet dry with paper towels and season with salt and pepper.
When oil is hot, place beef in the skillet and cook for 4 to 5 minutes or until deeply browned. Flip and cook for an additional two minutes. Transfer to oven and cook to desired doneness. (About 6 minutes for medium rare, but adjust this to your preferences.)
Remove from oven and place steak on a warm plate. Cover with foil and allow to rest while poaching an egg. Remove foil, top steak with poached egg and serve.
