
About two weeks ago I posted a link to the dish that inspired this one. I couldn’t get the combination out of my head. I tried, I really tried, but I failed.
The only other option? Make it myself, of course.
Whether you’re looking for a taste of the holidays, or just something that’s delightfully savory and sweet at the same time, this dish is sure to please. To top it off, it’s about as simple as it gets. With only three ingredients in the mix, it’s the perfect workday meal, or a great start to the weekend.
Cranberry Orange Turkey Thighs
Ingredients:
2 turkey thighs
1 can whole berry cranberry sauce
1 can mandarin oranges
Salt and pepper to taste
Method:
Preheat oven to 350°F
Rinse and dry turkey thighs. Season with salt and pepper. Place skin side up in large casserole or dutch oven. Drizzle oranges and cranberry sauce over turkey, including can juices.
Cook, uncovered approximately 1 1/2 hours. Let rest, serve and enjoy.
Serves 2, simply double the recipe (including canned ingredients) for 4
What I would have done differently had I thought of it at the time:
I would have added a bit of curry powder to the mix, and perhaps a few rosemary sprigs. Aside from that, nothing. this was absolutely fantastic!

You are right curry would be perfect with this.
Why Curry? Are you just missing your Mom? One would think that a dash or so of Poultry Seasoning or the favorite Sage would be a nice addition. It only takes a bit of fresh Sage to add a punch. To bring it up a level or two. You’ll have to let me know what ya think…N-
