The Holiday Season is here. That means that in the next day or so this blog is going to be full of baked goodies, cookies, candies and mounds of Holiday-style comfort food goodness. But what will the food blogger himself be eating through all of this? Probably something a lot like the dish pictured above.
This lunch, like many I find myself eating lately, is the result of having very little time to focus on myself while either getting things ready for one of my blogs, trying to find something in the freelance market that I’m willing to do for what they aren’t willing to pay, or dealing with the thousand little things I have to learn that goes along with my son’s therapy. It’s something I can throw together in just a few minutes, tastes good either hot or room temp and can be snacked on for hours while I’m in the middle of other things.
The ingredients are simple, the result is satisfying, and there’s very little effort involved in making this one. Consider it my way of sharing a little secret with all of you. I’m not always eating what you’re seeing. Sometimes those dishes are made just for my wife.
Besides. I really love this stuff!
- 1 pkg. Ramen or Yakisoba noodles (discard nasty MSG packet!)
- 1/2 lb. low fat turkey sausage, cut diagonally in 18-inch pieces
- 1/2 of one small onion, cut in half and then cut into strips
- 1/2 cup frozen green peas
- 2 tbsp. roasted red pepper strips, with juices
- 2 tsp. black bean garlic paste
- 1/2 tsp. minced garlic
- 1/4 cup light soy sauce
- 3 tbsp vegetable or peanut oil, for frying
- salt and pepper to taste
Boil water for noodles as directed on package. Meanwhile, heat a large skillet over medium-high heat. (If skillet is nonstick, be sure to have oil in while heating or you could damage the surface.)
Add noodles to boiling water. Add sausage and onions to skillet. Cook, stirring occasionally for about two minutes.
Remove noodles from heat, allowing to sit in hot water. Add peppers, garlic, black bean garlic paste and soy sauce to skillet and stir well. Add water from noodles if necessary to fully dissolve black bean paste. Simmer until sauce has thickened.
Add noodles and toss well. Add frozen peas and toss for approximately 1 minute.
Serve hot or at room temperature with soy sauce on the side if desired.
