Spam Fried Rice with Nori

by Jerry on September 27, 2010

Cooking for kids can be a serious challenge.  The things I find fabulous, they tend to balk at.  The things they crave I either balk at or am completely burned out on.  Sometimes I just have to take a gamble, try something different and pray that it works out.

This is complicated by the fact that I am trying to go through my pantry in the next 30 days.  Why? In about 30 days we will be moving to Alaska and most of what is in the pantry cannot go with us.  It’s use it or lose it time.  That means fewer options than usual and that creativity is key if I want the kids to eat what they consider to be “non food” items.  One of those items was SPAM

At least until last night.

This dish is something I’ve been wanting to make for a while.  The kids love fried rice. SPAM makes it simple to prepare and adds a lot of flavor to the dish.  The addition of the nori gives a nod to SPAM Musubi, which I adore, but until I got the kids to try this, was never going to be eaten.

I know a lot of people sneer at SPAM, but when treated as a proper ingredient, it can add a lot.  If you think about it, all it is is salt-cured ham, and sometimes saltiness is what you’re looking for.  Give it a shot.  I think you’ll enjoy it.

Pan Seared Mahi Mahi with Spring Greens and Arugula

May 20, 2010 Recipes

Sometimes I think that a dish I make is going to be far too humble to find its way here, but then I do a double take and scramble for my camera gear.  This is one of those cases.  A simple fillet of fish nestled in greens with a bit of dressing.  It’s so uncomplicated and unassuming that it nearly escaped my attention yet in its own way it’s the …

Buttery Garlic Pasta

May 11, 2010 Recipes

No matter what skill level you attain as a cook or what triumphs of culinary complication you manage to master over the course of a lifetime it’s a plain simple truth that sometimes simpler is better.  I feel that the simplest of dishes with the fewest ingredients actually takes more skill to master than dishes with complex ingredient lists and prolonged methods.

In a simple dish there is no room …

Surprisingly Wonderful Broccoli Slaw with Sesame

April 20, 2010 Recipes

Before someone asks, the name of this dish was coined my wife. When I asked her what I should call it for the post, she answered immediately “Surprisingly Wonderful Broccoli Slaw with Sesame”, so there you have it.

But of course there’s a story leading up to that point:

Earlier today I asked my wife if she would like some stir fried broccoli slaw.  Her response was to raise an …

Turkish Style Hummus

April 19, 2010 Recipes

My wife is currently visiting for her incredibly overdue mid-tour visit from her post in Turkey and, as is common for homecomings, she came bearing gifts for both myself and for the kids.  For the kids was a wonderful assortment of Turkish memorabilia.  For me she brought the ultimate gift. (Herself of course!) Spices and a Turkish cookbook!

The first thing that jumped out at me was the Turkish version …

Baby Bok Choy with Oyster Sauce Glaze

April 2, 2010 Recipes

Bok choy is one of my favorite vegetables.  It’s versatile, it’s flavorful and my kids love it.  In fact, it’s third in line of favorite sides in our house, beaten only by corn and brussels sprouts. (I know, my kids are strange.)

Bok choy also manages to stand up well to heavy flavors without giving up its own identity, which makes it a perfect pair for my love of …
