Pulled Smoked Pork Picnic Ham Sandwiches

Pulled Pork Picnic Ham Sandwich

Ladies and gentlemen, boys and girls of all ages, you over there in the corner. Yes, you! I am here to introduce to you a sandwich so sublime, so complete in porcine perfection that it should be named a prince, Nay! A King! Among sandwiches.

I present to you, good Sir or Madam, the smoked pulled pork sandwich. A dish that while it may derive its heritage from humble beginnings, achieves more than many a well-bred meal ever can, or will.

This is a dish with just a few ingredients. A picnic ham, bread and onions are the stars of this show.  Here you will not find pork slathered in a flavor masking sauce intent on bombarding your palate with vinegar or sweetness. That isn’t the way truly great pork rolls. This little piggy stands on his (or her) own, proud in the knowledge that second, or even third servings are not an option, they are an inevitability.

And it all starts with a picnic ham and smoke.

I’m not sure what prices are like in your particular geographic area, but in the last several places I’ve lived you’d be hard pressed to find a cut of pork that is less expensive than a picnic ham. Perhaps this is because most cooks don’t really know what do do with this particularly large and intimidating cut of the animal, but whatever the reason, they’re cheap. In my book that makes them the perfect candidate for a good meal.

And please: If you don’t own a smoker, don’t be put off.  This dish can be approximated without a natural wood smoker.  I’ll tell you in the recipe how to approximate the results in a normal oven.  You can do this. You owe it to yourself to do this. You won’t regret it.

Once the pork is finished, you’ll need to let it rest.  This isn’t due to any need to redistribute juices or to further flavors; It will just be too darned hot to deal with for a half hour or so, which is the perfect amount of time to add the second layer of flavor in the form of caramelized onions and a nice steamed bun. Of these three things, perfection is made.  Trust me.

Better yet. Don’t trust me.  Make this for yourself, then you won’t have to trust me.

But you might just thank me.

Spicy Sausage Soup Recipe

October 13, 2010 Recipes

It seems that fall has fallen in most of the country.  At least that’s the impression I’ve gotten from the seemingly countless number of cool weather recipes I’m seeing around the food community. I hear stories of chill mornings and rain.  Tales of clouds and worries of frost.

We haven’t been so lucky yet.  In my neck of the woods, temperatures are still in the 80′s and will probably be …

Pork and Pepper Curry Recipe

May 10, 2010 Recipes

What do you serve when you have two teenaged nephews over for the weekend in a house already populated by four men?  When you know that the two people visiting are capable of consuming the gross food production of some small island nations all by themselves in a single sitting?  Casserole came to mind, but since both of my nephews are fond of spicy foods there really was only one …

One of the highlights of Last years’ foodbuzz blogger festival was a wonderful brunch at LuLu.  I got to sit and hang out with some very old and dear online friends who are now just old friends.  The day was amazing! If you’d like to know more about it, follow the link above.  This post is about just one part of that day and a certain super-blogger’s love of bacon.…

Pork and Pepper Salad with Asian Plum Vinaigrette

January 31, 2010 Recipes

There is nothing more fun or more challenging for a seasoned cook or chef than dealing with an overage of product (leftovers for us laymen.)  While you could just reheat and serve, it will almost never be as good as the original dish was (unless it’s a soup or stew, which are sometimes made a day in advance and allowed to get better overnight.)  The idea of turning something previously …

Marinated Pork Fried Rice Recipe

June 12, 2009 Recipes

Fried rice is something I’ve covered on this blog on more than one occasion. Fried rice is a passion for both my wife and myself.  It’s a staple meal in our home for its versatility, ease of cooking and its ability to carry the flavors of almost any ingredient added to it, but this post is not about the rice.

Don’t get me wrong,  the rice was wonderful; but in …

Smoked Pork Fried Rice Recipe

Fried Rice is the perfect go-to meal.  As long as you have Rice, eggs and scallions you already have all the basics of fried rice on hand.  Anything and everything else that you happen to have lying about in the fridge or the pantry is fair game for this dish and there’s absolutely no reason not to throw just about anything including the kitchen sink, into the pan.

Apple Bourbon Braised Pork Recipe

December 15, 2008 Recipes

The other night I was looking for a recipe idea that just screamed Holidays. We’ve been going over plans for the move, getting paperwork in order and dealing with a sudden and potentially devastating problem that came just one month too early. I needed something realy holiday flavored to get me back in the spirit of the season before it fizzled out on me and this dish was just …

Braised Pork Roast with Parsleyed Potatoes Recipe

October 24, 2008 Recipes

The weather in our part of the world finally got chilly.  The moment that happened I had a definite urge to slow cook something for a very, very long time. Luckily i had just picked up a pork butt roast at the store a few days before.  Originally I’d planned on grilling and smoking, but with the mercury in the 40′s the roast suddenly had a new direction in life. …
