Frito Pie Burgers

Frito Pie Burger

I remember the first time my wife introduced me to the venerable Frito Pie, a Texas football tradition. While the concept was a bit odd to my Californian sensibilities, it was immediately obvious that, while not even remotely healthy, the Frito pie was good. No. Scratch that. Frito Pie is awesome.

It’s every flavor that the kid in all of us craves in one place. Chili (canned, Wolf Brand recommended), chips and gooey yellow cheese. It’s messy, over the top and indulgent. It’s all the things that you know you probably shouldn’t, as a responsible member of adult society, be eating at the same time. In short, it’s the perfect thing to base a burger on.

That’s exactly what I did.

Ladies and gentle-foodies, we present to you the Frito Pie Burger. A 100% American dish featuring only the best in foods that you might or might not have thought of putting together on a plate, but will be ever-so-happy that you did.

At first glance this might appear to be nothing more than a gilded chili burger. That is not the case however. This dish is so much more than that. It’s warm summer nights and the smell of freshly mowed grass. Its the warm embrace of a loved one and the sound of cheering crowds. It’s comfort and love and smiles, all from deep in the heart of Texas to you, wherever you may be.

But enough of my ramblings, go make yourself one of these. While you’re at it, make a few for your friends and family. They’ll thank you for it, I promise you that.

Curried Smoked Turkey and Pumpkin Soba

This week I embarked on a journey to see what myself and a few other intrepid grill masters could create using the same ingredients… And a grill.  As I’m a bit late with this, I’ll be brief.

It’s a Chopped kind of arrangement.  We get a list of ingredients and our task is to incorporate all of them in a dish.  This month’s ingredients were:

  • Turkey (either whole or part)

Creamed Onion Gravy

April 25, 2011 Recipes
Thumbnail image for Creamed Onion Gravy

The French will tell you that it’s all in the sauce.  Italians will tell you it’s all about the pasta.  In the Southwest it’s all about the gravy, and that is what this is all about, gravy. Wonderful, light, slightly sweet, onion infused gravy.

If I had to harbor a guess, I’d say that there is a good probability that this recipe is a translation of a German recipe, or …

Cowboy Irish Stew

March 22, 2011 Recipes

Who doesn’t love a good, hot stew on a blustery cold day?  I can’t think of anyone who wouldn’t be thrilled to find a meal like this waiting for them when they got home from a hard day’s work.  If those people also happened to be working all day on a cattle drive I’ll bet they were in absolute heaven.

This is one of several dishes I’m going to be …

Spicy Sausage Soup Recipe

October 13, 2010 Recipes

It seems that fall has fallen in most of the country.  At least that’s the impression I’ve gotten from the seemingly countless number of cool weather recipes I’m seeing around the food community. I hear stories of chill mornings and rain.  Tales of clouds and worries of frost.

We haven’t been so lucky yet.  In my neck of the woods, temperatures are still in the 80′s and will probably be …

Braised Smoked Ham Shank with Beans and Rice Recipe

October 11, 2010 Recipes

I’ve said it before and I will most definitely say it again.  Simple foods are the best foods.  Some of the most sought after dishes in the world are inspired by what were once food for the poor only. Meals that were originally intended to stretch a few meager ingredients until they couldn’t be stretched any farther have become the rage at swanky restaurants all over the world.

That’s because …

The Ultimate Grilled Beer Bratwurst Recipe

July 19, 2010 Recipes

I’m partial to any recipe that starts with “open two bottles of beer.”  In my case this may not indicate that the beer is actually going to be used in the recipe, but it almost always indicates a fun meal.  In this case it’s my tried and true method for making the ultimate bratwurst.

I learned the method from an episode of Easy Entertaining with Michael Chiarello and I want …
